I've modified the section for Payment Method on the customer view so that it displays my check payment information and mailing address.

I also allow web banking payments too.

I want to modify the top menu from saying "Payment Method" to "Payment Methods".  How can I change the top menu names?

The display names for the header are stored in an xml file in that directory.  You'll be able to change from Payment Method to Payment Methods from there.

Which directory?

I was only able to find locations.xml.

I'm sorry, it's the admin submenus stored in the xml files.  The top menu for the customer view is stored in the master page file in the main directory of the site.
